We always keep a hearty supply of Certified Piedmontese meat in our freezer, always have a big container of spinach, and always keep an array of canned beans in the pantry. The family loved the concoction and now it’s one of our favorites.

For this recipe I used the Certified Piedmontese Organic Fully Cooked Sweet Apple Chicken Sausage.  It gave the soup a tinge of sweetness, and since our kiddos love the sausage, it was a win-win.  If I were making this for adults, I would’ve used the Organic Fully Cooked Hot Smoked Chicken Sausage.  La Fabulosa loves a bit of heat!

CHICKEN SAUSAGE, SPINACH, AND WHITE BEAN SOUP

1 package of Certified Piedmontese Organic sausage-sliced
2 Tbsp, of Olive or Avocado oil
6 Cups of Chicken or Vegetable Stock
3 Garlic Cloves
1 Finely Diced Sweet Yellow Onion
1 Can of Diced Tomatoes (I used the 14.5 oz. size)
OR
1 Finely Diced Tomato (I love to add a bit of freshness)
USE EITHER CANNED OR FRESH TOMATOES, NOT BOTH
2 Cans of White Beans drained and rinsed (Can use Great Northern or Cannellini)
6 Cups of Spinach (I just grabbed several handfuls and didn’t measure)
Salt/Pepper
Rosemary, Thyme, basil (to taste)

In your favorite soup pot, heat your oil and add the sliced sausage.  Let it brown just enough to form the yummy glaze.  Throw in your garlic, onion, and sauté until translucent. 

Add in your broth, spices, canned tomatoes, and beans.  Let the soup cook long enough to come together.  I waited about 30 minutes starting with about 5 minutes at boiling, and the remaining 25 minutes on low.  Right as I was about to serve it, I added the handfuls of dried spinach and fresh tomato.  The spinach wilts very quick, so do not add it until the last minute.  As soon as the spinach wilts, give it a little taste test, adjust your spices, and serve!
